Whats for dinner? Shrimp Scampi & Rice

Shrimp Scampi & Rice
What you will need: 3 tablespoon butter
Olive oil
2 pound peeled, deveined shrimp
7 garlic cloves, minced
1 lemon Juiced
2 tablespoon chopped parsley or cilantro
Salt & Pepper

Melt the butter with a couple splashes of olive oil in a skillet.  Add the garlic and cook, stirring for 1 minute.  Addthe shrimp and mix well.  Add the lemon juice. Cook for about 4 minutes, until shrimp is pink.  Add the chopped parsley or cilantro.  Season lightly with salt and liberally with black pepper.  Serve with angel
hair pasta or white/brown rice. Enjoy!

Whats for dinner? Asparagus Ricotta Frittata

Asparagus Ricotta Frittata
What you will need: Salt & Pepper 1 ½ cups milk ½ lb. Ricotta cheese
½ lb. grated cheese Mozzarella

1 lb. asparagus (1 bunch), hard ends trimmed
8 eggs
Paprika for sprinkling on top 3 tablespoons Dijon mustard 1 ½ cups sour cream

1. Preheat oven to 375 degrees.
2. Spread the ricotta cheese in the bottom of an 13x9 dish.
3. Spread shredded cheese on top.
4. Layer the asparagus on top of the grated cheese.
5. In a bowl whisk the eggs. Add the milk and Dijon mustard. Whisk a little longer.
6. Pour the egg mixture over the asparagus.
7. Carefully spread the sour cream on the egg mixture.
8. Sprinkle with paprika.
9. Bake 40 minutes or until eggs are firm.10. Serve. ( I serve with Garlic Bread, Brand: Coles :)

My pregnancy UPDATE :)

So I had my 20 week ultrasound on Tuesday. They said baby looked great and shes still a girl ;) So instead of me being 20 weeks she said I was 22 weeks!! YAY! The baby currently weighs a pound she said.. a solid pound. I will be doing an update on my youtube channel this weekend.  So I am 22 weeks! Some symptoms.. Major lower back ache. Im itchy all over :( I am getting my energy back although I need a nap during the day. I've been getting major round ligament pain.. my belly is way bigger then last time most of you seen me! So just a quick update, I'll see ya in my vlog in a couple days! :)

New Year, New Hair !

 First off Happy New Year!!! 1 of my New Years resolutions was to get back to blogging, so I erased all my old post and Im starting fresh! So welcome! First post of the year... My new hair :)  So I just went to get my side bangs re cut and shaped and a shade darker. I ended up leaving with a spiral perm and a bunch of layers!
I have to say I love it! Friends and family have made their jokes.. "I didnt know we were still in the 80's" "Hey Weird Al Yankovich".. the quotes go on and on. lol Hair done by: Tracey @ Xtreme hair and nails in Tucson, Az Traceys been my hair stylist for 5 years now :)
